Brian Dean – Head Chef
Chef Dean grew up in Panama in a military household and moved to Charleston in his early teens. After attending Fort Dorchester High School, Brian went on to get his Bachelors Degree at Johnson & Wales University. After graduation, his culinary journey included a year studying abroad in the beautiful and appetizing atmosphere of Florence, Italy, a year cooking for the military in Afghanistan and a trip to Southeast Asia where he expanded his knowledge of Thai cuisine. “These experiences helped me better understand different types of cuisine and their uses of ingredients, and they made me a more open and well-rounded chef,” Dean explains. Upon his return to the US, Brian worked at the Swan and Dolphin Resort in Orlando and then moved on to work in the oil fields of Alaska. Brian is now settled back into the Lowcountry where the booming restaurant industry challenges him to think outside of the culinary box. Outside of the kitchen, Brian enjoys checking out the local farmers markets, eating at new restaurants, and keeping up with the Charleston cocktail scene, particularly Bourbon.“I’m excited to be back in the Lowcountry and look forward to exploring all it has to offer from a culinary standpoint.”
